As a result, our 2021 Sauvignon Blanc opens with aromas of lemongrass, grapefruit, and fresh flowers. In the winery, we preserve the distinctive aromatics of the grapes by minimizing exposure to air and fermenting with carefully selected cultured yeast in a combination of stainless steel and French oak. A small amount of Sauvignon Gris adds layers of flavor and interest to the blend. Warm temperatures continued into summer setting the stage for full ripening, fresh acidity, and beautifully balanced fruit. Winemaker Notes: The 2021 vintage was warmer than average with little rainfall leading to a relatively early bud-break. I would pair this very flavorful Sauvignon Blanc with baked cod with a Ritz cracker topping.
The finish is dry, and its flavors linger nicely. I also detected hints of gooseberry, vanilla, and asparagus. The flavor profile is tart yellow grapefruit, white peach and flinty minerality blend with notes of lime. The mouthfeel is balanced, round and bright. On the palate, this wine is light plus bodied with integrated medium acidity.
